I really felt like a sweet snack this morning, so decided to whip up some home made raw cashew butter. It’s delicious and naturally sweet without any added sugars. If you make yours at home like I do, then you know there’s no additional salt or other pesky additives.
I enjoyed sampling some of this batch spread on apple slices with a sprinkle of cinnamon. So yum!
Cashews are considered to contain a healthier fat because 75% of the fat found in cashew nuts is oleic acid, the same type of heart healthy unsaturated fat found in olive oil. Cashew butter is a also a source of protein and even contains trace minerals copper and magnesium. You can pre-roast your nuts, but I prefer mine raw as they offer a modest nutritional advantage over the roasted variety as roasting diminishes some of the essential minerals.
It took me 20mins from start to finish to make this batch. Here’s how to make your own:
Ingredients / What you need
- 2 cups of raw cashew nuts (whole or pieces are fine)
- 1/2 tsp cinnamon (optional)
- Food processor
- Glass jar / storage container
Place raw cashew nuts into your food processor and initially process for 1-2 mins. At this point your cashews will resemble the texture of a fine grain. Give your food processor a rest and scrape down the sides.
Continue processing in 1-2 minute bursts. As you process, the cashews will begin to clump together until it gathers into a ball. Stop the processor again and give it a short break (it’s kinder on your appliance!). Keep going and you’ll notice that the natural oil in the cashew nuts will slowly begin to release and turn the ball into a nice paste. Finish off with another 2 mins until you’ve reached a nice thick and creamy texture.
At this point you may add in cinnamon. I usually take out one small jar full first that is plain then add in cinnamon and process for 1 min to combine and have the second jar a mix of cashew and cinnamon (which is super yummy!).
Transfer your gorgeous home made butter into a jar. You can store this in the fridge for up to four weeks.
